OOOOKAAY,
The so-called "VERSIONS" that microsoft has put out, are mostly just bundles.
You see, the core "version" has a regular Xbox360, wired controller, and simple av connections.
The premium "version" includes a regular Xbox360, a wireLESS controller, (possibly) a remote for watching/playing media, a headset for online play, and live enabled.. which means that if you sign up for microsoft's xbox live gold you can play online with other players (requires internet connection).
The arcade "version" has less performance capability but can still play all of the xbox360 titles, NOT the original xbox games, as the core and premium systems can.
There is also another version in which you left out. The Xbox360 ELITE. Which comes just like the premium version of the original except it's black, and instead of 2 processors.. it has 4, generally making gameplay and loading times less laggy.
As pricing goes... ehh. I think the price lowered, and the last time I went to gamestop which was last week, it was $280, didn't check which system it was.
Good luck,
